The Fontina

DOP cheese

The Fontina DOP is a product of excellence from the Aosta Valley known worldwide. It is a cheese made from whole raw milk. With its soft, elastic, and intensely aromatic texture, this delightful cheese is the basis of many traditional recipes.

The Fontina produced during the summer, when the cows are in the high-altitude Alpine pastures, is more flavorful and aromatic, capturing the taste of mountain herbs.

Fontina is aged for at least 3 months on boards made of red spruce in environments with a constant temperature of around 10°C and high humidity. The aging cellars are created from military depots from World War II, dug into the mountains or from ancient mines. A few kilometers from the upper Great St. Bernard Valley, in Valpelline, a visitor center with a museum has been opened. It tells the story and production of this excellence, with the opportunity to take a fascinating tour of the aging cellar carved into the old copper mines.
