Jambon de Bosses DOP is raw ham that belongs to a centuries-old tradition. A document from 1397, preserved in the archives of the hospice at the Great St. Bernard Pass, contains the recipe for this unique aged ham.

The Jambon de Bosses is made from fresh pork thighs that are meticulously handcrafted. They undergo a dry salting process and are flavored with a special blend of spices and mountain herbs. Here in Saint-Rhémy-en-Bosses, where the climate is dry and the mountain air is pure and fresh, the hams are aged on a bed of hay. Every stage of the process respects the strict rules outlined in the DOP regulations.

In the old village of Saint-Rhémy, upon reservation, it is possible to visit the aging site. In addition, affiliated local establishments provide menus with the Jambon de Bosses for tasting.
