The grilled Jambon (ham) of Saint-Oyen is derived from a delicious recipe that has been passed down since the Middle Ages and today it enriches the culinary tradition of this valley. It is a lightly smoked cooked ham, sprinkled with a mixture of aromatic herbs, and slowly roasted on large spits over huge braziers that burn wood from local trees such as fir, larch, alder, or ash.

To brown the rind during the slow grilling process, the ham is continuously basted with wine and herbs. The production of Grilled Jambon de Saint-Oyen is regulated by strict guidelines that are followed from the selection of the raw materials.

The Prosciuttificio 2473 in Saint-Oyen produces this grilled ham according to tradition, and every year, the village hosts a festival dedicated to this excellent product.
